A protein is a chain of amino acids. They are the " bricks of the body " and make up our body: blood, organs, muscles, hormones, etc.; they serve thus not only to build of the muscle! Unlike carbohydrates and fats, proteins contain some nitrogen. One account 22 amino acids, among which 8 are said the main things because they cannot be synthesized by the body, and must be thus brought by the supply. Essential amino acids are the leucine, lysine, isoleucine, méthionine, phénylalanine, thréonine, tryptophane and the valine. Other non-essential amino acids can come from the supply or be synthètisés by the body. Muscles are thus made from amino acids coming from food proteins. In case of lack among the main things, the synthesis in units stops. It is thus important to consume proteins having a good profile in amino acids or to know how to associate them. The best sources of proteins are the ones which contain all the amino acids in the good proportions. Proteins resulting from animal sources (egg, meat or milk) are of better quality than those resulting from vegetable proteins, which suffer from deficiencies.
